Ingredients
∙1 kg potatoes, roughly chopped
∙½ small onion, finely chopped
∙ 2-3 garlic cloves, minced
∙½ tsp paprika
∙½ cup cassava flour
∙1/3 cup potato starch (add more, if needed)
∙2 tbsp chopped thyme (feel free to use different herbs, such as oregano or sage)
∙1 tbsp chopped parsley
How to Prepare
▻Using a steamer basket and a pot with some water, steam the potatoes for 20-25 min until soft. Separately, caramelise the onion and garlic for about 30 seconds. Place the potatoes in a bowl together with the paprika and the cooked onion and garlic. Mash until smooth and set aside for 10 min to cool.
▻Preheat the oven to 200°C. Line a baking sheet with parchment paper. Add the cassava flour and potato starch to the mashed potatoes and knead until you get a soft dough that isn’t sticky, adding more starch as needed.
▻Spread the dough evenly to approx. 1cm on the baking sheet, sprinkle with the chopped herbs, and press it slightly. Bake for about 25-35 min, until brown on top. Let it cool for 15 min before slicing.
