Ingredients

  • 400 g beetroot, peeled & diced
  • 1 medium-sized carrot, peeled & diced
  • 1 medium-sized potato, peeled & diced
  • 1 red onion, peeled & diced
  • 3 garlic cloves, peeled & chopped
  • 1 cm fresh ginger, finely chopped
  • 1 tbsp coconut oil
  • 1 cup cashews, soaked
  • Vegetable broth (enough to cover the vegetables in the Miomat appliance)
  • Himalayan salt, to taste
  • Freshly ground black pepper, to taste
  • Hulled hemp seeds for garnish

How to prepare

▻ Prepare all your vegetables by peeling and dicing them into small cubes.
▻ Place the diced beetroot, carrot, potato, onion, garlic, and ginger into the MioMat soup and milk maker.
▻ Add the soaked cashews into the soup maker along with the vegetables.
▻ Pour the vegetable broth into the soup maker until it reaches the indicated levels.
Season with Himalayan salt and freshly ground black pepper according to your taste preferences.
▻ Ensure that the appliance is properly and securely closed.
Plug in the MioMat and select the Creamy Soup program by pressing the Select button (no cylinder is needed).
▻ Start the cooking process by pressing the Start button.
After 30 minutes, the MioMat will beep, indicating that the soup is ready.
▻ Unplug the MioMat and open it carefully.
Taste the soup and adjust the seasonings as necessary.
Add hulled hemp seeds to your plate when serving.

Your soup can be stored in the refrigerator for several days or frozen for up to a month.
